Avocado stuffed with salmon and vegetables
Ingredients per person
1 ripe avocado
60gr smoked salmon
Cucumber sliced thinly
Purple onion sliced thinly and cooled in ice
Lettuce
Sesame
Vinaigrette dressing: juice of one orange and one lime, 1 teaspoon of sweet mustard, 1 cup apple vinegar, 1 cup soy sauce, 3 cups virgin olive oil, pinch of salt.
Method
Cut and slice the avocado. Remove the stone and skin.
Place the salmon and avocado on a plate and garnish with the lettuce, onion and cucumber.
Sprinkle with sesame and prepare the vinaigrette in a glass jar and shake well. Serve with the avocado.
